An outdoor kitchen should make dinner easier, keep the cook connected to the gathering, and feel like it belongs in the backyard. That outcome starts well before anyone chooses stone or countertop colors.
Before you build, make seven decisions: how you cook, how many people you host, where the kitchen belongs, which appliances you actually need, how utilities will reach them, what weather protection the space needs, and how every component will be cleaned and serviced later.
Those choices shape the island size, walking paths, seating, storage, lighting, shelter, and construction sequence. A beautiful grill island can still be frustrating if it blocks traffic, separates the cook from everyone else, lacks useful counter space, or makes ordinary maintenance unnecessarily difficult.
Utilities matter, but they are one part of the larger plan. Choose the actual appliances before rough-in, then coordinate gas, electrical, water, drainage, lighting, and data on one drawing before the patio and finishes make those routes difficult to change. The practical rule is simple: the way you want to use the kitchen drives the appliance plan, which then drives the systems, structure, and finishes.
Begin with the menu and the people
Before choosing appliances, describe two real evenings.
The first is an ordinary dinner. How many people are outside? What leaves the indoor kitchen? Where do raw food, clean tools, used dishes, drinks, and trash move? Does the cook want to face the guests or the fence?
The second is the largest gathering you realistically host. Not a fantasy resort party, just the birthday, game day, or family dinner that matters. Where do people gather while someone is cooking? Which route must stay open? What needs refrigeration, warming, serving space, or cleanup?
Those scenes help distinguish useful equipment from expensive countertop sculpture.
Build an appliance schedule with the manufacturer, model, location, energy source, connection requirements, clearances, ventilation requirements, and service access for each item. Include equipment you intend to install later so the current plan does not block it.
Do not leave "future appliance" as a vague note. Name the likely location and the pathway or capacity it may require. A future ice maker, beverage center, heater, television, or pizza oven may change conduit, circuit, gas, water, drain, ventilation, or access decisions now. You do not need to buy every item on day one, but the plan should not make the intended upgrade unnecessarily destructive.
Gas planning starts with exact equipment
"Gas to the island" is not a complete plan.
A built-in grill, side burner, pizza oven, fireplace, and heater can have different fuel, pressure, input, clearance, ventilation, shutoff, and regulator requirements. The professional designing the fuel system needs the exact appliance information and the total connected demand.
The route, pipe sizing, shutoff location, testing, and connection details should be determined by qualified professionals under the applicable code and permit requirements. Equipment enclosures must follow the listed appliance instructions. Do not assume a vent opening that looks generous satisfies a specific manufacturer's requirements.
Service access matters just as much as first installation. A regulator, valve, connection, or removable appliance should not be trapped behind a finish that has to be demolished for ordinary maintenance.
Cooking location also affects the roof, walls, railings, doors, windows, and traffic around the kitchen. The National Fire Protection Association's consumer grilling guidance says grills should be used outdoors and kept away from the home, deck railings, eaves, and overhanging branches. The exact installed clearances belong to the appliance instructions and approved design.
Electrical planning should follow the equipment schedule
Outdoor kitchens often combine refrigeration, ice, lighting, receptacles, warming or cooking equipment, audio, television, and controls. Some items need dedicated circuits. Some have limits on extension cords or placement. Pool-adjacent locations add another layer of coordination.
List what can operate at the same time, then have the electrical design account for the actual loads, required protection, disconnects, grounding and bonding, burial methods, and weather exposure. A qualified electrician and the authority having jurisdiction should govern the exact solution.
Think carefully about outlet placement. Receptacles should support actual work without encouraging cords across a sink, walking path, or hot surface. Place task lighting where the cook's body will not block it. Add low, shielded light for paths and steps so the kitchen can operate after sunset without flooding the entire yard.
If the project will include a refrigerator, confirm that the selected model is listed for the intended outdoor use and conditions. "Stainless steel" describes a finish, not where an appliance is approved to operate.
Separate convenience power from equipment power on the plan. A receptacle for a blender, charging phone, or holiday lights should not be an afterthought squeezed beside the grill. Likewise, a circuit serving an appliance should not become the assumed answer for every accessory someone adds later. The exact electrical solution belongs to the approved design and qualified installer, but the way people will use the counter belongs in the initial planning conversation.
Water and drainage need a four-season answer
A sink can make an outdoor kitchen easier to use, but it also introduces supply, drainage, venting, cleaning, and freeze protection questions.
Decide what the sink is for. Rinsing produce, washing hands, cleaning cookware, and serving as a full cleanup station can imply different fixture, hot-water, and drainage needs. The drainage plan must go to an approved destination. Sending sink waste into the yard is not a design.
Central Ohio weather also requires a deliberate operating model. Will the kitchen's water system stay active year-round, or will it be shut down seasonally? How are valves reached? Which components must be drained or protected? Who performs the procedure?
The answer should come from the approved plumbing design, qualified trade, and manufacturer instructions for the installed equipment. A generic winterization tip is not a substitute for a system designed to be maintained.
Data and controls belong in the rough-in conversation
An outdoor kitchen may support speakers, television, Wi-Fi, cameras, lighting controls, smart appliances, or pool equipment interfaces. Wireless coverage beside the house does not guarantee reliable service at an island behind masonry or beneath a pavilion.
Test the intended location and decide whether a protected data pathway, wired access point, or another designed network solution belongs in the project. Even if the electronics come later, an intentional conduit can preserve options before finished concrete or pavers close the route.
Coordinate the kitchen with the whole yard
Utilities do not exist only inside the island. They cross the site.
One coordinated plan should show:
- the house, kitchen, patio, pool, structures, doors, windows, and major landscaping
- exact appliance locations and required clearances
- electrical, fuel, water, drainage, and data routes
- panels, valves, shutoffs, cleanouts, outlets, and service access
- roof water, surface drainage, and finished grades
- public and known private utilities
- future features that might need a crossing later

The coordination meeting should happen before the rough-in is buried, not after a trade has completed its portion. That is where conflicts become visible: a shutoff behind a drawer, a drain crossing a footing, a conduit competing with a gas route, or a cleanout hidden under a finished cabinet.

Before approving the finish plan, make sure it shows:
- removable access where equipment and connections need service
- clear shutoff labels and reachable valves
- manufacturer-required ventilation and clearances
- a route for appliance removal without dismantling the kitchen
- drainage that does not trap water inside the enclosure
- documentation and photographs of buried or concealed utilities, kept with the project records
- the seasonal startup and shutdown responsibilities
